The water supply should have a minimum temperature of 120°F – 140°F, and a flowing pressure of 15 – 25 psig at the pressure gauge tee beside the solenoid valve. STEAM HEAT (When Specified) 3 A /4" union connection for the steam supply line is located at the lower right side of the machine. The steam supply must have a flowing pressure of 15 – 20 psig. CLEANING The machine must be thoroughly cleaned at the end of each working shift or at least daily. Never use steel wool to clean warewasher surfaces. Use only products formulated to be safe on stainless steel. Turn off the power switch. If the machine has steam heat, close the manually operated steam (ball) valve. Open the machine doors.
