INSTALLATION VENTLESS HOOD MODEL The Ventless Hood option is factory installed directly on the top of the Alto-Shaam Combitherm oven. The hood is designed to vent clean air back into the kitchen, filtering vapors and grease. A high-power fan draws steam and fumes into the 2 hood intake and out the top surface exhaust vent.
