OPERATING INSTRUCTIONS I. Remove Lexan water pan cover. 2. Fill water pan to 3/4 full (hot tap water is recommended when starting your proofing operation). 3. Replace Lexan water pan cover. 4. Set thermostat (black knob) to desired proofing temperature (90° to 100°F is recommended as a starting position - increase or decrease as needed to best suit your product). 5.
